Instructions to make Paneer Tikka Biryani

Instructions for cooking Paneer TIkka Biryani

1. Marinate the Paneer:

  • In a mixing bowl, combine yogurt, ginger-garlic paste, lemon juice, turmeric powder, cumin powder, coriander powder, garam masala, Kashmiri red chili powder, salt, and oil.
  • Add paneer cubes, sliced onions, and diced bell pepper to the marinade. Mix gently until the paneer cubes are well coated. Allow it to marinate for at least 30 minutes, or preferably, refrigerate overnight for maximum flavor.

2. Prepare the Biryani:

  • Heat ghee or butter in a large pot or pressure cooker. Add sliced onions and sauté until golden brown.
  • Add cumin seeds and let them splutter. Stir in ginger-garlic paste and green chili, and sauté until the raw aroma disappears.
  • Add chopped tomatoes and cook until they turn mushy. Then, add red chili powder, biryani masala, turmeric powder, chopped mint leaves, and chopped coriander leaves. Mix well.
  • Add soaked and drained Magic Rice to the pot. Stir gently to coat the rice with the spices.
  • Pour in 4 cups of water and season with salt. Bring it to a boil, then reduce the heat to low. Cover the pot and let the rice cook until it’s 80% done. Remove from heat and set aside.

3. Grill the Paneer Tikka:

  • Preheat the grill or grill pan over medium-high heat. Thread the marinated paneer cubes, onions, and bell pepper onto skewers.
  • Grill the paneer skewers for 2-3 minutes on each side, or until they develop char marks and are cooked through. Remove from the grill and set aside.

4. Layering the Biryani:

  • In a separate heavy-bottomed pot, spread a layer of cooked biryani rice at the bottom.
  • Arrange the grilled paneer tikka skewers on top of the rice layer.
  • Continue layering with the remaining biryani rice and paneer tikka, ensuring an even distribution.
  • Garnish the top with fried onions and chopped coriander leaves.

5. Dum Cooking (Optional):

  • If using a heavy-bottomed pot, you can proceed with dum cooking. Seal the pot tightly with aluminum foil or dough to trap the steam.
  • Place the pot over low heat and let the biryani cook in its steam for 10-15 minutes. This helps infuse the flavors and aromas into the dish.

6. Serving:

  • Once done, remove the pot from heat and let it sit for a few minutes.
  • Gently fluff the biryani with a fork, ensuring the paneer tikka remains intact.
  • Serve hot Paneer Tikka Biryani with raita, salad, or your favorite chutney.
